We stopped for lunch at Mama Jacks where we ate an amazing amount and variety of food for a very tiny price. Note the words below on the menu "fried", "crawfish".

April 11, Friday, Day 36: Logging
63 miles today from Cleveland to Silsbee, Texas. This is our last night in Texas! It may be a boring blog entry because it was a boring ride. Long, straight, flat roads with far fewer flowers, cows and horses than the last few days. We are in logging country, spending most of the day dodging large logging trucks. The shoulders of the roads varied from very wide to nonexistent, and some of the truckers refused to give an inch to our cyclists. There must have been a sawmill nearby as trucks in the other direction were coming back empty.
I am now in the land of standing water, humidity, and bugs. Below is a picture of a fire ant mound; Must mean I'm getting closer to home!

Good deductive thinking on the logging situation Lynn! Eat all the fried food you want, you are burning lots of calories. Can't believe you are about to enter Louisiana, keep up the good work.
